RIBBON RICE (LAYERED RICE)

Ingredients

1) Basmati rice-4cup
Lemon juice-1small lime 1big lime
Salt –to taste
2) CHUTNEY:
Grated coconut-1/2cup
Coriander leaves-a hand full
Green chilli-3no
Lemon juice-1small lime
Salt-to taste
3)FOR MASALA:
Shrimp-1/2pound (clean and washed)
Onion-2no
Tomato-1
Chili powder-1tbsp
Turmeric powder-1/2tsp
Salt as per taste
Ginger- 1tbsp
Ghee-2tbsp
Oil-2
4)FOR MUTTON:
Mutton-1/2kg
Onion-2no
Garlic-5no
Ginger-1pod
Green chili-3-4no
Tomato-1no
Chili powder-11/2tsp
Turmeric powder-1/2tsp
Coriander powder-3tsp
Garam masala-1tsp

Preparation

Wash the rice well adds boiled water to it. Add salt and lemon juice, stir and prepare rice.
For chutney grind all the ingredients without water, if need 1to 2 tsp water can be added .and keep aside.
Marinate the shrimp with chili powder turmeric powder and salt.
In a pan add ghee and fry onion well then add tomato and ginger fry till the tomato become soft. In this mixture add the shrimp to it and fry well till there is no water content.
Marinate the mutton with turmeric powder chili powder and salt.
In a pan add ghee and fry onion well then add tomato, ginger garlic, in this mixture add the mutton, coriander powder, garam masala and salt.
Cook mutton and fry well till there is no water content.
In a wide dish, spread the rice layer first, then add the mutton then spread the rice then add the chutney then again add the rice, then add the shrimp masala repeat this till the top most layer is rice.
Decorate with fried onions, nuts and coriander leaves. Cover the dish and bake for 10 minutes.
The very tasty and much wanted ribbon rice is ready.
